You set your target temperature on the controller and the unit circulates cold air up through a T-bar floor and around the load, holding it steady.
The walls are heavily insulated and lined with food-safe stainless steel or aluminium — no timber. Operating range is typically around -25°C to +25°C, so the same unit runs as a fridge or a freezer depending on what you set it to. It needs an external power supply, usually 3-phase, to keep running.
